Prized for its resilience, the pale yellow-green Caña Dura, also referred to as Caña Fierro, is the most common cane variety found in Cosautlán de Carvajal, Veracruz, where this batch was distilled by fourth-generation aguardientero Marcos López on a five-plate continuous still made of stainless steel and copper. Not only an adroit aguardiente distiller, Marcos also cultivates coffee, limes & citrus honey.

A renaissance man in the agricultural sense, Marcos Lopez not only cultivates and distills cane, but is also a coffee farmer, lime grower, and beekeeper. He learned the aguardiente trade from his grandfather and father, Marcos Sr. Marcos Sr. made the family’s aguardiente still, and also makes and repairs the stills of other local rum distillers.
